Pearled Oysters and Caviar
Oysters Pearled with Burke’s Black Garlic Cayenne and Caviar
Hot Sauce Pearls
Ingredients:
2 Tablespoons of Agar Agar flakes
1.5 Cups of Burkes Black Garlic Cayenne Sauce
1/2 Cup of water
Vegetable oil
Pour vegetable oil into a tall glass and chill in freezer for about 30 minutes. Add Agar Agar, hot sauce and water into a small pan and mix together. Bring mixture to a boil and simmer for 5 minutes, stir to be sure all of the Agar Agar flakes have dissolved. Remove from heat and allow to cool for 5 minutes and then add mixture into a dropper or squeeze bottle. Remove oil from freezer and slowly drop Hot Sauce mixture into the cold oil forming Hot Sauce Pearls.
Plating
Ingredients:
6 Oysters scrubbed
Caviar
Hot Sauce Pearls
Shuck oysters, place one dollop of caviar on top of oysters and one hot sauce pearl on top of the caviar and enjoy!
